Han’s Weekly Meal Prep – Country Breakfast Tacos

These are so simple to make and you can eat on the go!  Also, easier to prep beforehand!

Country Breakfast Tacos
Prep time: 15 minutes
Cook time : 10 Minutes
Ingredients:
Turkey bacon – half of the package
Low sodium boneless ham steak (I always buy the Amish brands, they’re generally the most organic. I have found one that comes pre-diced! If you can’t find that, just get 2 small ham steaks and dice them yourself)
Dozen eggs (I use brown cage free organic)
Organic shredded cheddar cheese
Whole milk or substitute coconut milk
Dash crushed black pepper
Dash pink sea salt
1/2 tsp cumin
1/2 tsp crushed red pepper flakes (use more to your liking)
Salsa or hot sauce (follow your heart, you know what you like, get it–I always have PACE Medium salsa)
TORTILLAS: I found a family brand that is no GMO, No artificial coloring/additives, etc. They have a green chili version which is WONDERFUL. Your tortilla, your choice, you need carbs in the morning to start your day, deal with  it. 1 tortilla will not set you off your goals…and if it does…I’m sorry..
Directions:
Cook the turkey bacon and set aside
Get a large bowl and whisk up those eggs.
Add some whole milk (whole milk is better than low fat, 2%, etc. since it’s the most natural version according to health reports I’ve read. The color of my eggs at that point is normally a light yellow.)
Grab a large skillet or saute pan. In medium heat add eggs, diced ham, seasoning (I don’t measure, I just throw in enough so it appears even through out)
Cook bacon if you have not yet and add
Throw in a handful of cheddar.
Cook to a scrambled consistency you like
Once cooked add the whole mixture to a casserole dish or large Tupperware for storage and so it doesn’t burn in the skillet.
I warm one of the tortillas in the microwave for about 30 seconds, add salsa/hot sauce to the tortilla then spoon on egg mixture
**If you’re reheating for another day I put back in for 30 more seconds.

IT IS DELICIOUS!!!
